Ingredients:
Herby avocado dressing:
- 1 cup basil, parsley and mint
- 1 avocado, scooped
- 2 tbsp extra virgin avocado oil
- ½ cup unsweetened Greek yoghurt
- 1 garlic clove, crushed
- 2 limes, juiced
- Salt, to taste
- ¼ cup apple cider vinegar
- ¼ cup extra virgin avocado oil
- 2 tbsp Dijon mustard
- 2 tbsp runny honey, or to taste
- Salt, to taste
- ½ cup VGood peanot chickpea butter smooth, warmed
- 3 tbsp tamari or soy sauce
- 2 tbsp sesame oil
- 2 limes, juiced
- 1 tsp runny honey or maple syrup (if vegan)
- 1 tsp ginger, finely grated
- 1 small garlic clove, crushed
- ⅓ cup hulled tahini
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 garlic clove, crushed
- 2 tbsp maple syrup
- Salt, to taste
- Water, as needed
Method:
- Herby avocado dressing: add all ingredients to a blender and blitz until smooth. Season to taste with salt.
- Dijon vinaigrette dressing: whisk all ingredients together in a small jug or bowl until well combined. Add honey to your desired sweetness. Season to taste with salt.
- Satay dressing: add all ingredients to a blender and blitz until smooth. Add honey/maple syrup to your desired sweetness.
- Tahini dressing: whisk all ingredients together in a small jug or bowl until well combined. Add water to your desired consistency. Season to taste with salt.
