Simple Salsa

  • 1 fresh red chilli
  • ¼ cup fresh coriander
  • 1 red onion
  • 2 tomatoes
  • 1 orange or yellow capsicum
  • ½ lime
  • sea salt and pepper
De-seed the chilli and chop finely. Dice the onion, tomatoes and capsicum and combine with the chilli in a bowl. Finely chop the fresh coriander, add to the bowl along with the juice of the lime. Season to taste with ground salt and pepper.
