For the Creamy Herby Feta
- 200g high quality feta cheese
- 110g (6 tablespoons) Greek yogurt
- 1/2 - 1 garlic clove, minced
- Fresh chives, cut finely
- 2 tablespoons extra virgin olive oil
- Pinch of chili flakes (optional)
- Squeeze of lemon juice
- Begin by making your whipped feta. Place all the ingredients in a small blender and blend until smooth. Set aside.
- Next, cook your meatballs or falafels and place to one side.
- Cook your orzo, drain and toss with butter, stir through the chopped herbs and season with salt and pepper.
- To assemble, smear some of the whipped feta on each plate, spoon a good amount of the herby orzo, top with the meatballs. Scatter a few extra herbs on top, a sprinkle of parmesan and a squeeze of fresh lemon juice.
