- 10-12 cherry tomatoes (halved)
- 2 tbsp olive oil
- ¼ teaspoon of sea salt
- 1 tbsp of sugar
- 3 sprigs of thyme
- 1 tbsp balsamic vinegar
Heat the oven to 120°C. Toss the tomatoes with all of the ingredients, apart from the balsamic vinegar. Place cut side up on a baking tray and place into the oven. Roast for 2 hours until the tomatoes start to shrivel. Drizzle over balsamic vinegar and serve.
