Potatoes with Rosemary
Serves 4 to 6, Prep: 20 minutes
Ingredients: 1 kg roasting potatoes (peeled and halved), ½ cup olive oil, 6 large cloves garlic (very finely chopped), 1 Tbsp finely chopped rosemary, ½ tsp salt, freshly ground black pepper.
Method: Pre-heat the oven to 200?C. Microwave or steam the potatoes until just soft. Roughly chop the potatoes into cubes the back of a knife. Heat the oil in a cast iron frying pan and add the potatoes and garlic. Brown all sides and then place into oven. Bake until crunchy and golden, roughly 20 minutes.
