- 1 kg roasting potatoes (peeled and halved)
- ½ cup olive oil
- 6 large cloves garlic (very finely chopped)
- 1 tbsp finely chopped rosemary
- ½ tsp salt
- freshly ground black pepper
Pre-heat the oven to 200°C. Microwave or steam the potatoes until just soft. Roughly chop the potatoes into cubes the back of a knife. Heat the oil in a cast iron frying pan and add the potatoes and garlic. Brown all sides and then place into oven. Bake until crunchy and golden, roughly 20 minutes.
