Slow - Roast Cherry Tomatoes

Serves 4, Prep: 10 minutes

Ingredients: 10-12 cherry tomatoes (halved), 2tbsp olive oil, ¼ teaspoon of sea salt, 1 tbsp of sugar, 3 sprigs of thyme, 1 tbsp balsamic vinegar.

Method: Heat the oven to 120 degrees centigrade. Toss the tomatoes with all of the ingredients, apart from the balsamic vinegar. Place cut side up on a baking tray and place into the oven. Roast for 2 hours until the tomatoes start to shrivel. Drizzle over balsamic vinegar and serve.
